When it’s hot outside the last thing you probably want to do is bake a cake, or even a batch of cookies. Why add more heat to the house with a hot oven? Instead use your grill to create this summery dessert.
Grilled Brown Sugar Balsamic Peaches (trust us, you may not think that balsamic vinegar goes with peaches, but it adds a nice hint of acidity to balance the sweetness of the fruit).
Ingredients
4 not so ripe peaches – really ripe peaches will fall apart on your grill
Brown Sugar
Balsamic Vinegar
Vanilla Ice cream
Basil for garnish
Process
Heat your grill.
Halve the peaches and remove the pits. Drizzle peaches with balsamic vinegar and then sprinkle generously with brown sugar. Let the peaches stand like this for about an hour.
Lightly brush the grill with olive oil. Place peaches face down. In three to four minutes turn the peaches over and sprinkle with more brown sugar. You’ll know when the peaches are done when they are soft all the way through. Test this with a fork.
Serve with a scoop of vanilla ice cream and a garnish of chopped basil.
To up your “gourmet”, use crème fraiche instead of vanilla ice cream. Make a basil simple syrup instead of just garnishing with chopped basil. Thyme would also be a nice savory accent to these peaches. Add a sprinkle of pink sea salt.
